The world built up around the prequels in the Legends verse was excellent and I think helped claim some of the potential as you say. I did not watch the Clone Wars series, though it has been recommended to me due to having some good episodes with various characters so will add it to my list!

Cassian and Jyn's complex relationship is perfection and gosh Chirrut and Baze are wonderful and I could have series about them! EEK. Now I want Bodhi and Luke, because there is never enough Bodhi. :)
Kylo Ren and General Hux are quite good villains! It is always interesting how fanfic authors think up different paths for them. It will be intriguing to discover how Rey, Finn and Poe all work out in the end versus the two major villains *hmmm*
Re reading material...I never read the ,Young Jedi Knight series, but I would like too, as that introduces the Solo twins and a host of other Jedi trainee children. http://starwars.wikia.com/wiki/Young_Jedi_Knights
The New Jedi Order is a long convoluted series with highs and lows, but worth the read for the war and discovering more on the Solo children. Traitor by Matthew Stover is the best book in my opinion as it really delves into Jacen's character and Stover - out of all the EU/Legends authors - truly understood Jacen and how to handle him. http://starwars.wikia.com/wiki/Star_Wars:_The_New_Jedi_Order
